GaengKluay Dib is a curry using a cultivated banana as an ingredient because it can be found easily.


Nutrition Facts

Cultivated banana contains tannins which help to treat gastric ulcer. Prevents from infection and help to decrease the acid in the stomach.



  • 400 grams Unripe cultivated banana
  • 100 grams streaky pork
  • 50 grams Cha-om or Acacia Pennata
  • 50 grams sliced WildbetalLeafbush (Cha Plu)
  • 1 tablespoon sliced shallot

Curry paste ingredients

  • 15 bird’s eye chilies
  • 10 grams cloves of garlic
  • 30 grams shallot
  • 1 tablespoon sliced galangal
  • 1 tablespoon sliced lemongrass
  • 1 tablespoon shrimp paste
  • 1 tablespoon boiled fermented fish
  • ½ teaspoon salt

    Background Khai-Kwam is traditional recipe of local people in Northern Thailand. Using duck eggs is highly recommended as the larger size than chicken eggs and the shells are harder to crack. Garlic enhances the growth of tissue in our body.   Ingredients 3 duck eggs 2 chicken eggs 200 grams minced pork 1 teaspoon sugar 1 tablespoon garlic, finely chopped 1 teaspoon grounded pepper ½ tablespoon coriander, thinly sliced ½ tablespoon spring onion, thinly sliced ½ teaspoon salt vegetable oil

Soup Khanun (Jackfruit Salad)ซุปขนุน

Background Although jackfruit is a fruit but young jackfruit is used as a side dish or vegetable for dipping with namphrik (chili paste). The Northeastern Thais (Isan) use jackfruits to flavor the taste.   Nutrition Facts Young jackfruit contains calcium, phosphorus, iron, vitamin A, B1,B nourishing  the body with energy, fat, protein, fiber, calcium, sodium, potassium, as well as also provides high antioxidants.   Ingredients 300 grams Young jackfruits 3 tablespoons roasted rice 3 tablespoons cayenne chili 3 tablespoons shrimp paste 3 tablespoons fish sauce 2 tablespoons sliced leeks 10grams peppermint ½ tablespoon roasted sesame seed

Gaeng Ped Gai (Red curry with chicken)

Background Red curry with chicken is adapted from the Arabs recipe since Ayutthaya Kingdom. Milk is a main ingredient of the Arab recipe while original Thai dish is not added milk. After adapting the Arab recipe, Thai people use the coconut cream instead of milk.  Gaeng Ped Gai is made from chicken, red chilies, herbs and coconut cream so the dish becomes aromatic and strong taste soup.   Nutrition facts The dish contains calcium, iron, phosphorus and beta-carotene from herbs and vegetables. Having the dish reduces a risk of blood clots, reduces blood sugar, relives coughing and improves a digestion system.   Ingredients 4 cups coconut cream 300 grams chicken ½ cup red curry paste 100 grams eggplant 20 grams pea eggplant 50 grams sweet basil leaves 10 grams Chee Fah chili, shredded Fish sauce Palm sugar Red curry paste ingredients 9 dried chilies, soaked ¼ cup lemongrass, thinly sliced ¼ cup shallots, shredded 2 tbsp. garlic cloves, crushed 1 tsp. sliced kaffir lime zest 1 tsp. coriander roots, sliced 1 tsp. black pepper corns 1 tsp. shrimp paste 4 tsp. coriander seeds, roasted 2 tsp. cumin, roasted Put all of ingredients in a mortar and keep pounding until everything is well-blended.
